Garlic Parmesan Ribs

Garlic Parmesan Smoked Pork Ribs

I have been trying to think how I could surprise the family with something different on Father's Day. I had this great rack of pork ribs chilling in the fridge and really was craving garlic bread when the light-bulb moment hit. Ditch the bread and lets baste this rack in warm buttery garlic butter using smoked garlic. 




WHAT YOU NEED:

  • 1 rack of your favourite pork ribs

  • 2 tbsp mustard

  •  1/4 cup of your fave savoury seasoning or GSP (GSP garlic salt and pepper rub)

  • Apple Cider Vinegar for spritzing


GARLIC PARMESAN BUTTER SAUCE

  • 1 cup salted butter

  • 1/2 cup granulated Parmesan

  • 2 tbsp fresh chopped parsley

  • 1-2 whole smoked garlic heads mashed into a paste

PROCESS;

1. remove the membrane on the back of the pork ribs. (using a paper towel to help grip the membrane will allow for an easier removal)

2. Apply the mustard evenly over all sides of your ribs. Coat the ribs in the seasoning.

3. Preheat your grill to 250F and cook the ribs for 1.5 hours before starting to spritz the ribs. 

(this is where I will deviate from a traditional 3-2-1 rib cook method which you can totally use and achieve great results).

4. Continue to smoke the ribs rotating and spritzing every hour for 2 more hours.

5. In a double layer of foil place the Parmesan, garlic, parsley and cubed butter. Lay the ribs face down into the foil and close creating a foil pouch. 

6. Place the foil pouch on the grill for 30-45 minutes. 

7. Remove from the grill. Rest for 10-15 minutes. 

8. Enjoy those delicious buttery ribs!
