Smoked Breakfast Skillet

 I am a big fan of family feasts, skillet and sheet pan meals. The breakfast skillet can be made in a cast iron skillet or on a baking sheet. 

Skillets are easier than you think and are a quick way to use the leftover ham, sausage or other protein you have. Add a few fried eggs on top and you’ve got a full out feast!

PERFECT FRIDGE CLEAN OUT MEAL

This really is a perfect meal to use up extra leftovers in the fridge. It doesn't need to be ratio perfect and no two skillets need to be the same. The best part of a good skillet is knowing that you can combine any combination of protein, starch and veggies and you will have a great meal.

PACK IT WITH PROTEIN

Skillets are great to use leftover ham, bacon, sausage, steak or other protein. Add more protein by topping it with your favourite cooked egg. I love a good over easy egg to get that golden yolk drip in. 

PRE-HEATING THE SKILLET

This sounds odd but you need to preheat the pan and the oil. Think of it like a bit of a deep fryer. If you want crispy potatoes don't put them in cold oil. You wouldn't put them into a cold deep fryer and get crispy potatoes. 

EASY BAKED BREAKFAST SKILLET RECIPE

Yields: 4 servings

Prep: 15 minutes

Cook Time: 40 minutes


INGREDIENTS


This 10” skillet recipe includes:
  • 1 russet potato
  • 1 full pepper (I had two halves on hand)
  • 1/2 onion diced
  • Leftover cooked ham or any protein you want to incorporate. (Approx 1/2 -1 cup)
  • 1 scallion (or chives)
  • Cheese (you are the master of your own destiny here)
  • Oil & some seasoning
  • (feel free to add in anything you want, mushrooms, zucchini, sweet potatoes, jalapenos, etc)



DIRECTIONS


  1. Preheat grill and your skillet at 450F (you can put the skillet or sheet pan in your oven as it preheats or on your grill once the start up has completed).
  2. I like to microwave my potato for a few minutes to speed up the entire cook. You don’t have to do this before cooking but I like to get things on the table quick. Once semi soft cube.
  3. Add oil to pan. 
  4. Add potatoes and 1/2 tsp or as desired seasoning. Toss and bake for 15 min. (If not microwaving potato return to cook for 10 min before moving on).
  5. After 15 min turn potatoes and add in peppers, onions and precooked meat. Return to oven for 10 minutes. 
  6. Add cheese and cook for 5 min.
  7. Top with diced onions and serve.

Add your favourite cooked eggs on top for a complete breakfast skillet experience.
