Stuffed Porkloin Roast

There are nights you want to enjoy a meal that feels like a holiday but without the work (or the price tag). Food prices are at all-time highs so being creative with family dinners can give a sense of feast even on a weeknight. 
I love this recipe not only because it is budget friendly but because it is so simple to make. I invite you to try to make it for your family of company. 


SMOKED STUFFED PORK LOIN ROAST


INGREDIENTS

  • 1-2lb pork loin

  • 1 box of stuffing mix ( Stove Top Turkey or Chicken are my preferred)

  • 1/2 diced apple (skin on)

  • 2 stalks celery diced

  • 2 tbsp butter

  • 1 cup water (chicken stock is also a great option but low or no sodium)

  • BBQ Seasoning of your choice (go sweeter)



DIRECTIONS

1. Cut the tenderloin horizontally 1/3 (about 1” thick) to 90% of the way through and then opening it like a book, and cut back to create a long open flat sheet. I used a tenderizer before adding the stuffing.
2. In a pan sautee the apples and celery with butter until translucent. Add water and stuffing mix. Stir and remove from heat.
3. Spoon the stuffing onto the loin then roll. Tie with butcher string every 2" along the roast to eep the form and hold the stuffing in place.
4. Season the porkloin with your fave bbq seasoning. For this cook I used a Sweet Rib Rub (Pit Boss Grills).
5. Cook on indirect heat (would be great on your pellet grill or even in your oven too!) at 400F until the center reaches 145F to 160F. Rest for 5min minutes before slicing vertically.


Suggested Pairings: Mashed garlic potatoes and pork gravy and a side vegetable. Brussel sprouts or asparagus are a family favourite.
